  • To start off, you need to procure the ingredients, namely grated unripe mangoes; dry, shredded, and unsweetened coconut; sliced spring onions; basil; red chilli; chopped coriander; bean sprouts; crushed peanuts or cashew nuts; and lastly, an optional choice between sliced, cooked chicken, and shrimp. For the dressing, you will need either fish or vegetarian sauce; lime juice; brown sugar; and of course, Thai chilli sauce.

    After gathering everything, the first thing you need to do is to fry the coconut without using oil for about 2 to 3 minutes until it turns light golden brown. Next, mix up all the dressing that you have prepared in a salad bowl until it gives off the savoury taste that you prefer, and set it aside. After which, you will need to toss in all the ingredients mentioned above and then do a taste test. If you prefer it saltier, then add fish or vegetarian sauce. If you want a sweeter taste, on the other hand, adding honey will do the trick. If you find it too salty or too sweet, then put in more lime juice. For a spicier flavour, add more Thai chilli sauce.
